i have a i7 6700 (non-k) and i really like it.
xeon is a server chip iirc.
i'd recommend the i7 since hyperthreaded cores

Xeon E3-1240 v5 has the same hyperthreaded cores(4cores/8 threads) and it has no built in graphics.

Did you use graphics built-in your CPU? Is it enough to work in vegas or premiere(I mean did software work on this graphics)?

i personally use a dedicated gpu (gtx 970) i use vegas and haven't changed the render settings much so im guessing it doesn't use my gpu although im not 100% sure

i7 is great, but if your editing and have your own graphics card, xeon makes more sense in the long run
